The grapes come from the family’s Paradiso and Gerbino vineyards where soft rolling hills and a lower altitude produce very ripe and fruit driven grapes. Paradiso in Contessa Entellina are the family's largest vineyards planted on soft rolling hills at altitudes around 400 meters above sea level, surrounded by olive groves. Gerbino in Contessa Entellina is the family's oldest vineyards, originally planted by great grandfather Ciaccio. The altitude ranges from 420-480 meters above sea level; Soft rolling hills and mixed clay with limestone soil.
The property is delinated into 5 unique vineyard sites. San Giacomo is in the zone Sambuca di Sicilia. Vineyards surround the Di Giovanna winery and are also inside the Monte Genuardo Nature Reserve, at an average of 650 meters above sea level. The soil is calcareous clay, stoney. Fiuminello is in the zone Sambuca di Sicilia. The vineyards are just below the forested mountains of Monte Genuardo and nestled inside the Nature Reserve, at altitudes ranging from 730-820 meters above sea level. The area is noted for extreme day to night temperature swings; stony ground, rich with organic substance. Gerbino in Contessa Entellina is the family's oldest vineyards, originally planted by great grandfather Ciaccio. The altitude ranges from 420-480 meters above sea level; Soft rolling hills and mixed clay with limestone soil. Maceration on the skins for 8 hours, temperature controlled. Grapes are soft-pressed over 3-to-4 hours in which only the 1st flower (Primo Fiore) is used to produce the wine. The Primo Fiore is the first 55% of the pressed juice, the rest will be sold as bulk wine. Fermentation starts with a combination of ambient yeasts and organic selected yeast in stainless steel tank on the fine lees for 6 months with regular batonage, fined and filtered before bottling.
Aged on the fine lees for 6 months with regular batonage.
