Yields lowered by 50% with green harvest along with leaf thinning. Grapes are hand-harvested when it is fresh, between the hours of 4:30am-9am and 5:00pm-9pm. Daytime temperatures during harvest can average 95F to 104F degrees.

The grapes come from the family’s Paradiso vineyard, a selection of the best fruit each vintage. Paradiso in Contessa Entellina are the family's largest vineyards planted on soft rolling hills at altitudes around 400 meters above sea level, surrounded by olive groves.
The property is delinated into 5 unique vineyard sites. San Giacomo is in the zone Sambuca di Sicilia. Vineyards surround the Di Giovanna winery and are also inside the Monte Genuardo Nature Reserve, at an average of 650 meters above sea level. The soil is calcareous clay, stoney. Fiuminello is in the zone Sambuca di Sicilia. The vineyards are just below the forested mountains of Monte Genuardo and nestled inside the Nature Reserve, at altitudes ranging from 730-820 meters above sea level. The area is noted for extreme day to night temperature swings; stony ground, rich with organic substance. Gerbino in Contessa Entellina is the family's oldest vineyards, originally planted by great grandfather Ciaccio. The altitude ranges from 420-480 meters above sea level; Soft rolling hills and mixed clay with limestone soil. Paradiso in Contessa Entellina are the family's largest vineyards planted on soft rolling hills at altitudes around 400 meters above sea level, surrounded by olive groves. Miccina is located in Contessa Entellina. The vineyards surround the family stone barn. The average altitude is 350 meters above sea level with mixed soils consisting of mixed clays, limestone, tufo.
Destemmed, warm maceration for 18-20 days on the skins, temperature controlled. Fermentation in stainless steel tanks.
Aged 50% in French oak barrels for 6 months, and in bottle for 6 months before release.
