The organic grapes are hand-harvested mid-September, destemmed and macerated on the skins for 5 days. Spontaneous fermentation with ambient yeast in stainless steel. Spontaneous malolactic fermentation. Unfined. No sulfur added. Certified Organic.
Aged in stainless steel on fine lees for 6 months before packaging.
