Vino Nobile di Montepulciano
primarily volcanic clay and slightly rocky
All grapes are harvested manually. They are fermented in big stainless steel vats at a controlled temperature and then left in stainless steel for an additional 5 months. The Vino Nobile di Montepulciano is aged for 18/24 month in slavonian oak casks and small barrels. Then it rests in bottles for other 4/5 months before being sold.
Aging : 24 months divided as follows: 70% in barrels of 30hl Slavonian oak, 30% in French oak barriques, 6 months minimum in bottles
