Viticulture

Organic vineyards planted by Thomas Esteban, averaging 25 years. Soil comprised of boulder, round river stones, and sand with a subsoil of clay, sand, and limestone. 50% old bush vines, 50% trellised vines

Vinification

Organic practices. The fermentation process is very gentle without intensive extraction, in 50% stainless steel tanks and 50% oak barrel with indigenous yeast.

Aging

24 months 80% French oak, 20% American oak, in 60% new and 40% one year old barrels. Unfiltered, unfined.
