From one of the winery's oldest blocks, planted adjacent to the winery on shallow soil. The gnarly, old vines, which are now nearly 40 years old, continue to produce vibrant, expressive Sauvignon Blanc year after year. Vineyard elevation is between 2400-2700ft with west-facing aspect.

60 acre vineyard with three different parcels. 2400'-2700' elevation. Average age of vines is 30 years. Volcanic soil.

Vinification

Grapes are 100% hand harvested early in the morning. All fruit is hand sorted to remove leaves or any sub-standard fruit. Fruit is destemmed with 30% whole berry. Immediately pressed at low pressures to avoid any astringency. Wild yeast are used to ferment this wine over a long period at low temperatures. No malolactic fermentation takes place.

Aging

The wine is aged on its fine lees in stainless steel tanks for one year prior bottling, then 3 months in bottle prior to relase.
