60 acre vineyard with three different parcels. 2400'-2700' elevation. Average age of vines is 30 years. Volcanic soil.

Vinification

Hand sorted before destemming. Ambient yeasts used. 50% barrel fermented in French, Slavonian, and Hungarian oak barriques, and 50% in stainless steel. Fermentation takes 3-4 weeks, after which the wine is stirred on the lees.

Aging

10 months in French and Hungarian oak barrels (small portion in stainless). 3 months in bottle.

Bright and fresh, this wine truly shows its high elevation heritage, with notes of lemon, green apple, and brioche. Aged in a combination of stainless steel, French, Slavonian, and Hungarian oak barrels, of which 10% are new.
