Hilly area of Castel Campagnano in the Beneficio area, planted at 260 m above sea level. Soil is a sandy-clay mix with good organic content and some gravel. South/South-East exposure

Vineyard

23-year-old vines, planted in 2003. All estate grown and farmed organically, not certified. Manual harvest into small crates in Mid-October.

Vinification

Gentle and slow destemming; pressing of whole grapes and transfer of the must into stainless steel tanks for alcoholic fermentation; maceration on the skins for 15 days; racking, decanting, transferring to wood after malolactic fermentation.

Aging

Aging partly in 10 hl French oak barrels and partly in ceramic for 12 months. Bottled in the winter following the harvest; it then rests in the bottle for another 12 months.
