The 35 years old vine grows on Kimmérdgien - Argilo - Calcaire soil.

Vineyard

Vines are near to the Grands Crus valley, on right bank of the Serein River which runs through Chablis. Thanks to its exposure, it is considered as one of the best of Premier Cru.

Vinification

The grapes are sorted and gently pressed in a pneumatic press, to extract the very best of the fruit, then brought down by gravity in a stainless steel vat. The must is fermented at a controlled temperature between
15°C and 20°C until it is dry, no residual sugar. The wine undergoes malolactic fermentation, and is biologically stabilized to limit the use of sulfites while it stays on fine lees for a few months. After a tangential filtration, the wine is bottled.

Tasting Note

The nose offers a beautiful citrus bouquet, very complex. Perfectly balanced in the mouth, floral and buttery, showing notes of ripe fruits, pear, peach, with a nice freshness. The finish is mineral and incredibly long. It pairs wonderfully with shellfish like lobster, especially in a creamy sauce or simply grilled.
