Carignan, Grenache (Garnacha), Syrah (Shiraz)
The vineyards of Garnacha and Cariñena are head trained and dry farmed. The Syrah is planted on trellis. The oldest vineyards were planted in the 1950's. All of the vineyards are sustainably farmed without the use of herbicides, fungicides, or pesticides.
Sustainable
The vineyards are planted at 450M above sea levels in the mountains of Montsant. The Garnacha is planted in licorella slate soils, the Cariñena in calcareous clay soils, and the Syrah in sand.
Bodegas Ordóñez works with several dry farmed, head trained vineyards of Garnacha, Cariñena (Mazuelo), and Syrah planted in a three separate soil types. The Garnacha is planted in licorella black slate, the Cariñena is planted in sandy clay, and the Syrah is planted in calcareous limestone soils.
The grapes are destemmed and ferment in stainless steel vats by vineyard parcel and varietal. Malolactic occurs in used barriques.
The wine is aged for 8 months in used barriques. The blend is assembled once malolactic is completed.
