The vineyards are composed of 81 acres/33 hectares of vines in Sancerre and 24 acres/10 hectares in Menetou-Salon. The vineyard is 70 years old and the vines are an average age of 30 years old. The vineyards are situated on hills, and the soil is kimmeridgian marls and stony calcareous.
Fermentation in stainless steel tanks at low temperatures, allowing a slow increase of the tempature to enhance the aromas. Rests on total lees until December, then on fine lees until February.
