Carignan, Cinsault, Grenache/Garnacha, Syrah/Shiraz
Traditional techniques; ploughing, hand harvesting and sorting by each grape-picker. Depending on the variety the vines are between 30 and 50 years old.
One part is in the north of Orange city on slightly stony and clayey calcareous soils. Another part is in the south of Orange city on alluvial terraces with pebbles.
Total de-stemming of the grapes. Maceration for a period of 15 days using the technique of the "delestage" for a better extraction of the polyphenols and the anthocyanins.
6-12 months in stainless stell tanks
