Patrimonio’s hillsides rarely require treatments of any kind, so Eric’s practices are essentially organic (though without certification).

Vinification

The grapes are picked by hand and then undergo direct pressing followed by settling at a low temperature (9°C). The juices are then vinified in stainless steel vats at 15 and 17 °C.
