Total destemming. Temperature-controlled cuvaison of approximately three weeks with remontage (pumping over) twice daily. Elevage for all three wines in temp-controlled vats. No malo-lactic fermentation. The blanc remains on its fine lees with bâtonnage twice weekly through December. It is filtered and bottled in February
