Established in 1897 in Yamakita, in the foothills of the Tanzawa Mountain range. The brewery sits near the mineral-rich Sakawagawa River, atop the Nishitanzawasan sublayer known for its spring water. Fifth-generation brewer Mr. Tsuyuki, trained at a major wine importer, realized his medium-hard water and traditional methods were ideal for crafting complex, age-worthy sakes—not just aromatic Junmai Daiginjo. Today, the brewery produces small-lot sakes aged for layers of depth and flavor.
