Tasting Note

The phantom Omachi rice is known as one of the most difficult sake rice to grow, imparting body and richness to the sake. The medium-hard water gives the Moromi a robust and healthy fermentation, which results in a clean finish with layers of flavor. Pasteurized once and bottle-aged for up to five years prior to release, this sake develops exceptional complexity. It is perhaps a rare sake that can benefit from decanting prior to serving. In terms of profile, the aroma offers faint notes of dried green apple. On the palate, flavors of dried apple and coconut turn into layers of umami. The finish is long and complex, cleaning up nicely but continuing to unfold, keeping on and on. This sake is also great warm. It pairs well with grilled meat and seafood. It’s a sake that can also stand up to a hearty dish like beef stew or Korean BBQ.
