Vinification

Early morning hand harvested at 23–2 24.5ºB. Skin contact for 8 hours, light pressing. Settle for 2 days at 10ºC. Fermentation in stainless steel over 49 days at 14 C with selected yeast strains. Light bentonite fining. Total acidity: 5.17 g/l. pH: 3.62 RS: 8.4
