Terroir

The Volcanique cuvée is produced from parcels with volcanic/basalt soils. In contrast to the granite soils which are sandy and very poor, the basalt soils have on average 25% of clay mixed in, which helps with water retention. The basalt soil tends to give the wine a bit more tannin and “rusticity”.

Vinification

The Volcanique is produced using the semi-carbonic technique with two-thirds of the bunches whole cluster (The same sandwich as the 'Les Gourmet'). The maceration lasts about 11 days.

Aging

The wine is matured in tank until the following spring and then bottled.

Tasting Note

A great classic of the domain where the terroir gives the grape variety a character different from its most common expressions. If the typical fruitiness of Gamay is present, it is however dominated by warmer notes that evoke smoke and pepper. Similarly on the palate, the profile of a light, tender, tangy wine fades away in favor of a mouth structured by tannins reinforcing the smoky sensation. A powerful wine suitable for many combinations, both with meats in sauce and with smoked food preparations whose character will be reinforced by the wine.
