All fruit is estate-grown and organically farmed on the Suarez Family estate. Grapes are hand picked.

74 acres planted on calcareous soils with a north facing aspect.
Vines are both cordon and double guyot trained.
Grapes are whole brunch pressed. The time with skins is just an hour and a half. Fermentation is spontaneous with native yeast. Aged for a couple of months with lees in stainless steel tanks. No fining. Total sulfur: 30ppm.
Aged for 8 months, 4 months in bottle.
