The Adega Saiñas vineyard is a collection of historic, old-vine sites across distinct terroirs in Espasantes (Ribeira Sacra), which are now farmed with great precision. The combination of these jaw-dropping old vineyards with the analytical care of the current owners and the winemaking guidance of Luis Seabra is what now produces wines of singular quality and expression.

Vinification

95% Mencía, 5% Garnacha tintorera

Minimal intervention. The wine is a pure expression of the unique Clima vineyard in Valdeorras. Hand-harvested. Fermented with wild yeasts in open French oak vats. Aged for 11 months in a combination of used French oak barrels and large foudres.
