The climate typically presents hot days and cold nights, with a considerable temperature variation. Harvest takes place in two, separate stages: an early harvest to obtain good acidity, freshness and floral notes; and a second harvest to obtain tropical fruits aromas and flavors.
The soil is sandy and rocky
First the grapes undergo a cold, pre-fermentation maceration to preserve primary aromas, followed by fermentation with a series of pumpovers to ensure a more balanced extraction. The juice is then fermented for about 12 days at low temperatures.
Aging: 6-8 months on French Oak
