Vineyard

Terrassous farms a total of 800 hectares of vineyards. The average age of the vines that go into their Rivesaltes is 25 years old. They are planted in limestone clay at elevations between 200m and 300m. Vines may be as old as 100 years but average 25 years.

Vinification

Settling of the juice before fermentation under controlled temperatures (below 20°). Then the fermentation is stopped by the addition of pure wine alcohol (mutage).

Aging

Aged a minimum of 18 years in seasoned oak barrels, without topping up.

Tasting Note

Dark bronze color. Intense and complex nose with notes of toasted chestnut, fresh fig and dried plum. The mouthfeel is luscious displaying layers of aromas in an amazing complexity. Gorgeous ! Enjoy with foie gras, duck with orange, fresh fruit dessert or sorbets and dark chocolate mousse.
