Upon arrival at the winery, the grapes undergo direct press to release juice. Fermentation begins with a combination of 50% ambient yeast and 50% selected. Both primary and malolactic fermentation take place in barrels. The wine spends time on lees before a minimal filtration.
The wine is aged in 60 gallon French oak barrels for 10 months before release.
Honey, graham cracker, and squash aromas areechoed on the palate, framed by fresh acidity and a hint of salinity.
