Karim farms about 8 hectare of vines, multiple plots within reach of Morgon, including spots in Chiroubles, Fleurie, and Regnie. That said, he is growing his holdings as his daughter joins him in the family business. All the gamay vines are bush plants, trained gobelet style without pruning (cases tied down).
Vinification
Karim's Nouveau is vinified in stainless steel, whole cluster fermentation, with no additions to start the fermentation. The wines are unfined and unfiltered, with minimal SO2 at bottling (typically ~15mg/l).

Tasting Note
Starts with aromas and flavors of wild berries, currants, cranberries, and plums, followed by touches of spice, licorice, and hints of oolong tea. Silky and refined in texture, this Nouveau is very elegant and structured, Allow it to breathe for 25 minutes and enjoy with charcuterie, poultry, and even dessert, such as ginger spice cake.
