This is a unique sake made from wine yeast. The wine yeast brings out the acidity and the sweetness in this sake. It is a genshu, meaning not diluted, but only 12% ABV as the wine yeast is not as vigorous as sake yeast. It has notes of pineapple and citrus, with a long finish. Pairs well with spicy food, sweet and sour chicken, and al pastor tacos.
