Vineyard

Estate grown fruit. Vineyards are 40 years old (old vines) and 7 years old (young vines). Grassy ground is kept between the rows and tilled by horses.

Vinification

The grapes are crushed directly in the press machine. Fermentation with ambient yeasts. The wine is matured on its lees until spring. Fining agents: Bentonite and vegetal proteins. The wine is filtered just before bottling. Total sulfur: 60 - 80ppm.

Aging

Aged for 3-4 months in stainless steel followed by 2 months in bottle.
