With summer in full swing, cocktails are everywhere from sidewalk tables to happy hour gatherings to the Saratoga Springs race track. Herbaceous options are still showing up like the sage and blackberry muddled with bourbon at Nic’s Trattoria in East Greenbush or basil in the Kiwi’s Can’t Fly at Hamlet & Ghost in Saratoga Springs.

The drink: Aperol Spritz

Aug. 3 was National Spritz Day, but who needs just one day when the classic Aperol Spritz is the official marker of summer?

When Bocage Champagne opened the doors on its diminutive, impeccably styled space, the selection of sparkling wine, Pét Nat and Champagne were the guaranteed stars. But owners Clark Gale and Zachary Denham surprised us with crustless sandwiches like foie gras PB&J and reserved some love for a few classic cocktails including a ginger-spiced bourbon Old Fashioned with orange bitters and a zingy Aperol Spritz made with Ca’Furlan ‘Beatrice’ Prosecco and orange bitters to amplify the bitter citrus notes. Served in a stunning modern wine glass over ice with a large orange wheel.

A summery staple, this is Bocage Champagne Bar's take on the classic Aperol spritz.
