Nonsense and Fantasia Pet Nats were created in 2018 after a very difficult year of rains and floods. The alcohol content was too low to make the other Casa Comerci wines, so the family decided to do something daring and nonsensical – to make sparkling wines in the ancestral method, which no one was doing in Calabria at the time. These two wines were fantasy, nonsense, because they were an unusual idea out of necessity and with experimentation. It was a new challenge for them, and while they were dreaming up this idea around the dinner table (while drinking wine), patriarch Domenico started writing ideas for the names, and his calligraphy is what’s used on the labels.
Vinification
Pressing without de-stemming, in order to avoid colors and tannins extraction. Partially fermented cooled at 16°C is blocked “cooling it” so as to produce residual sugar which will lead to a second fermentation into the bottle. Maceration in steel vat for 2 months.
Sulfites: Zero added
Sulfur: 4mg/L
Aging
Aging in bottle for 6 months.
