A vineyard selection of only the best grapes from a single vineyard of 60yrs.
After a long cold maceration on the skins for 40hrs, the wine is racked off the skins into Steel tanks for fermentation. After a slow fermentation, the wine is racked off of the gross lees but remain on the fine lees for 10 months with frequent battonage. This extended contact with the fine lees protects the wine from oxidation and allows for only a small amount of sulfur to be used. Gently fined and filtered before bottling.

Straw yellow colored wine with discreet greenish reflections. Fresh, floral bouquet with typical citrus notes. Delicate taste, soft but not sweet.
