Tasting Notes
The very young and primary Xarel.lo 2023 CastellRoig So Blanc has low alcohol (11.5%), a low pH (3) and high acidity (7.9 grams) and is spicy and floral, with notes of aniseed, fennel and white fruit, fresh, mineral and salty. It comes from three different soils and fermented in stainless steel, where it was kept with the lees for seven months. 21,608 bottles produced. It was bottled in March 2024.
