Made mostly from roussanne, with about 10 percent each viognier and marsanne, it’s grown in the north of Pic St-Loup, on a mix of clay and limestone. In 2015, the wine channels the warmth of the appellation in its deep yellow hue and tropical fruit scents, then does a stunning 180, focusing the flavors on stones and savory herbs. The richness remains in the nut-oil texture, but it’s clean and light, allowing the mineral flavors to shine. This wine lasts for days open in the fridge, realizing more detail with every meal.
