Nerissimo is Dario's take on a "classic" Nero d'Avola, before the "Super-Sicilian" style came into fashion. Nerissimo captures the freshness of the sea with the intense energy of the Sicilian sun, bursting with spice-tinged black fruit within a framework of fine tannins and salinity.

Vineyard

1.5 hectare single vineyard of Nero d'Avola of limestone rich soils near the sea.

Vinification

Foot tread in concrete Palmento and macerated on the skins for 2 months. Aged for 18 months in concrete Palmento.
