Tasting Notes
The 2020 Cabernet Sauvignon is de-stemmed, fermented in stainless steel and undergoes a longer skin contact than the Pinot Noir (14-21 days), 50% malo in new oak and 50% malo in tank then raised in 45% new oak for 15 months. It offers brambly red fruit, sous-bois and subtle floral scents on the nose, gaining intensity with aeration. The palate is medium-bodied with powdery tannins, fine acidity and quite structured with a dash of black pepper enlivening the finish. Enjoy this over the next decade.
