The 2023 Ventoux Il Etait Une Fois is 80% Grenache, 15% Syrah, and 5% Mourvèdre brought up in foudre, amphora, and concrete eggs, with the Syrah and Mourvèdre brought up in new barrels. Black raspberries, peppery garrigue, candied violets, and terrific floral notes all shine here, and it's medium to full-bodied, has a pure, elegant mouthfeel, and ripe, integrated tannins.
