Made with Organic Grapes. Vines are trained and pruned into Cordon de Royat form. Soreli is a naturally resistant grape variety, no special or chemical treatments were used.

Terroir

Young Soreli vines planted in sandy, clay soils.

Vinification

Harvest is destemmed and fermented with native yeasts in concrete tanks. Gently extracted using punching technique. Macerated for 15 days on the skins. Pressed and aged partially in stainless steel tanks and in large wooden foudre. Minimal amount of sulfites added before bottling.
