Aging

After destemming, the must, in contact with the pomace, ferments with the help of selected yeasts in stainless steel tanks for about 2 weeks at a controlled temperature. After racking, it is left to mature for about 6 months in oak tonneaux, before a second passage in stainless steel for a further 6 months. Once bottled, it continues its aging for a further 2 months.

Tasting Note

This wine showcases an intense ruby red color, clear and consistent in appearance. Its nose is both intense and complex, with dominant notes of red fruits such as cherry, currant, and blueberry, complemented by spices like cinnamon, vanilla, tobacco, and cocoa powder. Floral hints of violets and the herbal nuances of rosemary and eucalyptus add further depth. On the palate, the wine is dry and tannic, with good acidity and pronounced savoriness, achieving excellent balance. Flavors of red fruit and spices reappear, enhanced by the delicate aromatic complexity imparted by time in tonneaux.
