The affordable 2019 Mosset Brut Nature was produced with the three classical grapes—Xarel.lo, Macabeo and Parellada—that were fermented separately and kept with the lees for three months, then blended and put to referment in bottle, where the wine matured with the lees for 28 months. It comes gushing out with froth and bubbles. It's fresh, with 12.5% alcohol and a low pH of 2.9 and high acidity, 6.4 grams, and a combination of notes of fennel, aniseed and white fruit with yeast, smoke and bread dough. It is nuanced and elegant with balance and complexity beyond the price point. 32,543 bottles produced.
