Vineyard

The vineyards are those of the Yonne, the perfect zone for well-balanced, long-keeping wines. The northeast of Auxerre and around Vézelay: calcified oyster shell fossil-based soils. For the Southeast of Auxerre and in the Tonnerre - the soil is clay based.

Vinification

Vinification prior to bottling, in stainless steel tanks, 100% malolactic and juice separation in the press. Only the very best juice is retained from the different pressings and these selections are vinified separately. Dosage 5g/l

Aging

Matured in stainless steel vats for around 10 months then laid down for a further 5 years ageing in bottle racks before disgorgement.

Tasting Note

Rose-hued gold, with the slightest touch of orange. On the nose shows aromas of rose petals, biscuit, sweet almonds and cherry stones. Tender and subtle, with a delicious fresh feel, the red berry fruit of the finish goes on endlessly.
