The vineyards are those of the Yonne, the perfect zone for well-balanced, long-keeping wines. The northeast of Auxerre and around Vézelay: calcified oyster shell fossil-based soils.

Vinification

Vinification prior to bottling, in stainless steel tanks, 100% malolactic and juice separation in the press. Only the very best juice is retained from the different pressings and these selections are vinified separately. Dosage 5g/l

Aging

Matured in stainless steel vats for around 10 months then laid down for a further 5 years ageing in bottle racks before disgorgement.

Tasting Note

Very bright, pale golden in color. On the nose it is complex, with aromas of biscuit, ripe stone fruit, scents of delicate blossom and sweet almonds. Great purity and depth on the palate, with a subtle mineral touch and remarkable length. Well-balanced and substantial.
