Biodynamically farmed.
Pruning and soil work are done in accordance with the lunar phases; phytosanitary defense is done solely by the use of small amounts of copper, sulphur and natural infusions, including honey-based sprays to combat mold. Green manures (cover crop) composed of legumes, wheat and mustard enrich the soil with organic substance and increase biodiversity by encouraging the presence of useful insects.

Vineyard

Made from a "cluster selection" from their Barbaresco vineyards Starderi, Fausoni, Montefico and Ovello. Stefano and Gabriele are looking for only the ripest (most lignified) brown stems for this wine.

Vinification

All native yeast and spontaneous ferment. 60% whole-cluster and 40% pressed juice fermented separately. After 25 days, the whole-cluster fruit is pressed and blended with the previously pressed juice to finish fermentation.

6 months in 10-year-old barrique
