The vines lie at elevations as high as 450 meters on a few different hillsides that surround the village of Clairvaux. Much of the vineyard is terraced and the soil is an iron rich clay known locally as “rougier” with outcroppings of limestone.
Manual harvest. Maceration for 15 to 20 days in temperature-controlled stainless steel vats.
Extraction by punching down, pumping over and racking.
Aged in stainless steel vats.

New Jersey and New York
Red color with purple highlights. Fresh nose of red fruits and spices dominated by blackcurrant and pepper. Notes of spices and red fruits on the palate, with a licorice and sometimes mentholated finish. Lo Sang del Pais is a typical Marcillac where the "mansois" grape variety shows its easy-drinking side. Serve slightly chilled with grilled meats.
