Vineyard

Castelnau is in the northern zone of the appellation which is warmer and more humid. Vines are interspersed with garrigue and pine trees and grow on cretaceous limestone mixed with clay marls (argilo-calcaire). The southern zone is a sandy, gravel-covered plain with uniform rows of well-exposed vines that tilt down to the Mediterranean’s Thau Basin.

Vinification

Cooling after gentle destemming and crushing. Soft pressing and selection of the best juices. Fermentation with selected yeast in temperature-controlled stainless steel. Wine is moved to temp-controlled stainless steel tanks and kept on its fine lees until it is filtered and bottled. Minimal sulphites used.

Aging

Aged on fine lees. ​Limited addition of sulfites.

100% Picpoul de Pinet from sunny southern France! This wine features scents of lime sherbet, crushed stone, brine and white peach. It's light to medium- bodied, with a smooth, nearly silky feel on the palate, then finishes clean, refreshing, elegant and citrusy. The flamingos on the label are a staple of this coastal part of France.
