Vineyards located in Gioia del Colle, Castellaneta, Gravina in Puglia, and Laterza. 20 to 40 year old vines. Hand harvested. 8.5 tons per hectare yields.
Sandy vineyards are high up on the hillside and dry farmed.
On arrival at the winery, the grapes were crushed and immediately pressed. The contact time with the skins was measured in seconds, not hours. The grapes were processed as fast as possible in order to ensure that all the fruit flavours were preserved and colours kept under control. The juice then underwent a slow fermentation at low temperatures of 7ºC in order to retain the delicate perfumes of the grapes. Only natural yeasts were used during fermentation.
After fermentation the wine was aged for 3 months in cement/stainless steel. After bottling we let the wine rest for at least 3 months. No wood is used.
