Growing Method : organic farming
Situated in the locality of Molsheim. Literally "rock of the shepherd", exposed south-east face, this soil on marl and limestone soil of the Muschelkalk benefits from a low slope, resulting in a soft maturation and gentle ripening of the grapes.
Winemaking Method : 100% de-stemmed, natural yeast, thermoregulation, malolactic fermentation.
Aging on lees in oak barrels for 6 months and then bottled March 15, 2018 without filtration.
