Vinification

Our pinot noir grapes are hand-harvested in the vineyard and is then hand-sorted at the winery and fermented in small, single vineyard lots with daily hand punch downs. The Overlook Pinot Noir is aged 10 months in French oak (33% new) barrels. During the aging process, the winemaking team tastes, tests, and then finally selects from these individual barrels to create the final blend of our Overlook Pinot Noir.
