Salice Salentino IGT
Vineyards are located in Salice Salentino. 20 to 60 year old vines. 9 tons per hectare yields. Hand harvested.
Sandy vineyards are dry farmed and trained on trellises to prevent the sensitive grapes suffering from sunburn.
On arrival at the cellars, the grapes were pressed, destemmed and cooled to 18°C and the must was allowed to ferment at its own pace. Only natural yeasts were used during fermentation. After racking in mid-November, the wine remained in an underground cement tank where the temperature did not exceed 10°C until bottling.
After fermentation the wine was aged for 6 months in cement/stainless stell. After bottling we let the wine rest for at least 4 months. No wood is used.
