South-east facing 1 ha parcel on half-hills. Age of vines 50 years-old. Mâconnais style pruning short, with 10 to 12 buds. Hand harvesting.
Limestone soil from the Jurassic period, covered by pebbles acting like a filtering soil.
Destemming is used to avoid herbaceous taste. Slow and gentles pneumatic pressuring guarantees purity of juice and extraction of the finest aromas. Very slow alcoholic fermentation in stainless still tank. Malolactic fermentation follows.
Matured in oak barrels for 9 months with gentle stirring of fine lees.
