100 year old vines. 35hl/ha yields. 60% Grenache, 40% Cinsault.
Granitic sand topsoil on base of gneiss.
All fruit is destemmed. The rosé is a made entirely from direct pneumatic press juice. Fermentation takes place in temperature-controlled stainless steel tanks. No malolactic. Cuvée Légende remains on its lees until mid-March in temp-controlled stainless steel tanks before being filtered with kieselghur (powdery diatomaceous earth) and bottled in April.
A savory rosé, with notes of herbs and flowers accenting the delicacy of its pale fruit. Its power lies in the texture, at once airy but substantial, which holds the flavors long.
