Viticulturist-winemaker Kenny Likitprakong sources this very special Pinot Noir from a dry farmed, organically farmed, sandy two acre site, slightly elevated about 40 feet above the Aptos Creek in the Santa Cruz Mountain AVA before it runs into the Pacific Ocean.
The winemaking and cellar work is simple, natural and unforced. The wine is fermented without commercial yeast or other commercial adjuncts and aged primarily in neutral French barrels with a small percentage of new oak revolving in each year. All of the wine is sur lies for 18-20 months with no or very little sulfur added until bottling and then bottled without fining or filtration.
