Partially de-stemmed. 10-day prefermentation cold maceration. Cool fermentation in stainless steel tanks with pumping over, delestage. 100% malolactic fermentation is done. Wines are not fined (are vegan). Lightly filtered (kieselguhr and lenticular). 25-30 free Sulphur, 65-80 total Sulphur
