Terraced slopes composed of unique calcareous limestone, clay and schist mix called Petra Bianca.
Total destemming. Temperature-controlled cuvaison of approximately three weeks with remontage (pumping over) twice daily. Elevage for all three wines in temp-controlled vats. Rouge remains in vat for one year and undergoes light plaque filtration before bottling.
